Simple and Quick Pumpkin Fix

Fall is my absolute favorite season! Part of it is the crisp, cool evenings, part of it’s the beautiful colors of the changing leaves, but I’ll be honest…it has a lot to do with pumpkins. Pumpkin spice coffee, pumpkin muffins, pumpkin pie, pumpkin cookies, pumpkin roll…I think you get the idea. So today I gave in and made my first pumpkin yum of the season…super easy pumpkin spice cookies.

All you need is a box of spice cake and a can of pure pumpkin…yup, it’s THAT easy!

After you preheat your oven to 350 you’ll want to dump the cake mix into your mixing bowl of choice then dump the pumpkin in right after.

Next just mix and mix until it’s blended. If you’re like me and haven’t worked out in a while this will give you a nice little arm workout. There, you just burned the calories that you’ll intake when you eat all the cookies after they’ve cooled.

Use a spoon or a nifty Pampered Chef scoop (hello, I loooove my scoop!) and put the dough about 2 inches apart on a greased cookie sheet. (Again, I used my Pampered Chef stone…loooove!) (Side note here…you can also add mini chocolate chips to the mix to have an even more delicious cookie.)

Then just pop them into the oven for 10-12 minutes and enjoy the wonderful, pumpkiny aroma that wafts from your oven. Once they are done go ahead and let them cool on a rack. You will be tempted to eat one right away but let me warn you these little suckers pack some hidden steam so watch out! At least break it open and let it cool for a couple seconds before you pop it into your mouth.

And no, I don’t have any after pics unfortunately. Two reasons for this…one, many of them were immediately devoured by my three ravenous monsters beautiful boys and two, my camera battery gave out on me. Maybe it was just jealous that I too was eating scrumptious pumpkin spice cookies…guess we’ll never know. You could easily top these with a sprinkle of powdered sugar or use them to make gobs with some yummy cream cheese frosting slathered in between. If you weren’t drooling before, I bet you are now!
